Watercress Potato Salad with Horseradish Dressing


This is especially good with pan-seared, grilled, or roasted salmon.

2 tsp. prepared horseradish (or 1/2-1 tsp. grated fresh)

1 tsp. white wine vinegar

2 green onions, sliced

Salt and pepper

4-5 small red potatoes, about 1/2 lb., steamed skin-on and small cubed

1 packed cup watercress

Whisk together the first four ingredients. Toss with the still-warm potatoes.

Lightly stir in the watercress and serve.
