Warm Zucchini Salad
Very bright summer vegetable side salad.
2 c. zucchini and/or yellow summer squash, cut into about 1/8”-1/4” rounds
2-3 Tbsp. crumbled feta cheese
½ clove garlic, minced or pressed
½ tsp. lemon zest
½ tsp. lemon juice
2 Tbsp. mint and/or parsley, snipped finely
Salt and pepper
Saute the zucchini for 3-5 minutes in 1 Tbsp. olive oil, until lightly browned. Arrange on salad plates, and sprinkle with feta. Whisk together garlic, lemon zest and juice, and 2 tsp olive oil. Drizzle over the zucchini and cheese. Scatter the herbs on top and season with salt and pepper.
