Sauteed Zucchini Matchsticks

The matchsticks provide a pretty presentation.

1 Tbsp. olive oil

2 c. small-med. matchstick-cut zucchini or summer squash (about 2”-3” long)

Salt and pepper

2 Tbsp. toasted, sliced almonds or pine nuts*

2-3 Tbsp. shredded Parmesan (or other hard cheese)

Quickly saute the zucchini in olive oil for about 1 minute, just to warm. Season with salt and pepper, and scatter with nuts and cheese. Serve immediately.

*Toast raw nuts in a dry skillet over medium-low heat for a few minutes, stirring often, until golden brown and aromatic.
