Cauliflower Soup


Cauliflower makes a wonderfully luscious cream soup. It's delicious "plain", or you can jazz it up with a pinch of the spice of your choosing- cumin, curry, thyme, tarragon, nutmeg are just a few that would work well.

1 Tbsp. olive oil

3 Tbsp. minced onion

1 small head cauliflower (or 1/2 large head), broken into florets

2 medium potatoes, diced

Equal parts of vegetable broth and milk

(start with 1 c. each; then add more if you wish to thin the consistency)

Salt and pepper to taste

Saute the onion in olive oil until soft, add cauliflower and potato and saute for about 4-5 minutes. Add liquid and simmer for 15-20 minutes until the vegetables are tender.

Put in a blender and puree until smooth. Season to your taste.

Note: you can skip putting it in the blender, and leave as is. It's still delicious!

Cauliflower is a really yummy vegetable addition, (along with carrots, celery and onion) to chicken noodle soup!
