Classic Parsley Potatoes

Some dishes are so timeless, classic, and universally loved that they're perfect for any kind of meal, and this is one of them; works beautifully for an elegant dinner party or a quick family dinner.

1 lb. baby potatoes

2 Tbsp. butter

2 Tbsp. snipped parsley

1 tsp. lemon zest

1 tsp. lemon juice

Salt and pepper

Steam whole potatoes until fork tender.

Melt butter in a skillet. Add potatoes, 1 Tbsp. parsley, lemon zest and juice, salt and pepper. Saute until potatoes are beginning to brown (about 5 minutes). Roll often. Sprinkle the parsley in the skillet at the last minute, and roll the parsley around in it to coat. Or, simply transfer the potatoes to your serving bowl, sprinkle with parsley, and toss lightly.
