Salt and Vinegar Potatoes

Like your fries with vinegar? You’ll love this!

3/4 lb. halved or quartered small new potatoes or fingerlings (bite-sized pieces)

1/3 c. vinegar (+ more for drizzling)

1/2 Tbsp. butter

Salt and pepper (+ coarse salt, optional)

1 Tbsp. snipped chives and/or chopped green onions

Put potatoes, vinegar, and about 1 tsp. salt in a large saucepan. Add water so that the potatoes are completely immersed. Bring to boil, then reduce to a low simmer for about 15-20 minutes or until fork-tender. Drain and lightly pat dry.

Melt butter in a large skillet over medium-high heat, and add cooked potatoes. Season with salt and pepper, cook until well browned and crispy (5-10 min).

To serve, drizzle with a little more vinegar, sprinkle with chives and/or onions, and coarse salt, if using.
