Mashed Purple Potatoes

Be a Purple Potato Eater! Smash ‘em, Mash ‘em, Skol Vikings, Let’s Go!

Small portion recipe- easy to double.

1/2 lb. purple potatoes

1 small clove garlic, minced

1 Tbsp. sour cream

1 Tbsp. butter

1 Tbsp. grated Parmesan

Salt and pepper to taste

Peel and cut the potatoes into cubes. Steam them for about 15 minutes or until fork tender. While potatoes are warm, add the other ingredients and mash until desired consistency.
