Creamy Broccoli and Potato Soup

Very easy, hearty broccoli soup!

1 Tbsp. olive oil

2 Tbsp. finely chopped mild onion

4 c. vegetable or chicken broth

1 bunch broccoli, including stems, chopped (should have about 7 c.)

1/2 lb. potatoes, diced

Salt and pepper

Shredded cheddar or colby cheese, for optional garnish

In a soup pot, saute onion in the olive oil for 2-3 minutes, until soft.

Add the broth, broccoli, potato, and season with salt and pepper.

Simmer for 15-20 minutes, or until the vegetables are soft.

Puree in a blender until it is smooth. Pour into serving bowls, and garnish with shredded cheese.
