Corn Ceviche Shots

A perfect toast! A terrific appetizer or festive side.

2 Tbsp. minced red onion, or other mild onion

3/4 c. small-chopped red bell pepper

1 apple, small-chopped

1 c. corn kernels

2 Tbsp. orange juice

2 Tbsp. lime juice

Salt and pepper

Optional: a few snips of cilantro and a dash of sriracha

Combine and serve in cocktail glasses or wine goblets.
