Irish Champ

Champ is a streamlined, simplified Colcannon: Traditional Irish mashed potatoes mixed with cream/milk and chopped green onions -without cabbage or greens. Delicious!

3 lbs. peeled potatoes, halved or quartered

1 cup milk

1 cup chopped green onions

6 Tbsp. butter, melted and kept warm

Salt and pepper

  • Boil the potatoes in salted water until soft.

  • When potatoes are nearly done, bring the milk to a very low simmer in a saucepan.

  • Drain potatoes and mash thoroughly.

  • While mashing potatoes, toss onions into milk to get them warmed.

  • Add warm milk and onions to the mashed potatoes, along with half the melted butter.

  • Season with salt and pepper to taste.

  • Pile the potatoes into your serving dish, make a dent in the center, and pour in the remaining butter- creating a “butter puddle”, as my Irish grandmother would say!
